The 30-year-old celebrity chef recently engaged his audience of over 384,000 followers on Instagram by posting an engaging video demonstration of his go-to hangover cure. In a humour-infused narrative, Khanh candidly disclosed his reliance on pantry and fridge staples that combine to create a comfort dish after a night of indulgence.
The dish, a spicy tuna and broccolini pasta, intriguingly includes ingredients that many might already have to hand. The composition is simple yet effective: extra virgin olive oil, up to 15 cloves of garlic finely chopped, an assortment of chillies, parsley, Serena tuna in chilli oil, vibrant broccolini, cherry tomatoes, pasta, and a touch of lemon zest and juice. As Khanh cheekily advised, the aim is to prepare enough pasta “like enough to not be hungover.”
The preparation process, as explained by Khanh, involves cooking the pasta just shy of its recommended time, allowing it to finish cooking amidst the vibrant mix of garlic, chillies, and parsley sautéed in olive oil and the aromatic oil from the tuna. Broccolini stems and tops are sautéed alongside cherry tomato halves until softened, with a splash of pasta water for added texture and moisture.
